What is Glucose oxidase?
Glucose oxidase is an enzyme that converts glucose into gluconolactone. It is synthesized from the fungus aspergillus niger. It releases hydrogen peroxide in this process which actually acts as antimicrobial agent.

Use & Benefits:
Itis mainly used in food industries as an oxygen scavenger. It is incorporated into packaging so that it uses up the oxygen and produces hydrogen peroxide, which in turn protects from any microbial contamination. It mimics the body’s natural defense system, and hydrogen peroxide is bacteriostatic so the microorganisms cannot actively proliferate. It can also be used as an antifungal agent. It is GRAS (Generally recognized as safe) by the FDA.
