What is Sodium hexametaphosphate?
Sodium hexametaphosphate, also known as Calgon, is a chemical substance made up of polymeric metaphosphates. It is a hexamer composed of repeating (NaPO3) units, i.e., a polyphosphate with six units of metaphosphate [(NaPO3)6]. This chemical is water-soluble and has a polyphosphate chain length circulation. It was first prepared in 1963 by the German chemists Erich Thilo and Ulrich Schulke. It is commercially used as a sequestrant in food, an emulsifier in canned food, syrup, and milk, among others.
