What is Xanthan gum?
Xanthan gum is a polysaccharide secreted by the bacteria Xanthomonas campestris. It is produced by the fermentation of simple sugars. Xanthan gum was discovered by Allene Rosalind Jeanes and her research team in the US. It is available in the form of a white powder, which is odorless and soluble in water. Xanthan gum has a wide variety of applications, such as a food additive, a thickening and emulsifying agent, and in cosmetic products.
